Valentine's Day has never been a big deal in my relationship. When the kids arrived and the celebration shifted to a day about love and cuteness, I was happy to embrace it.
And you all know one of my favourite ways to show love. Food, of course!
I had planned to make mini Red Velvet cupcakes, but life happens and time gets crunched. The mini muffins made a good (though, not red) substitute.
I am dedicated, but I also have three of these lunches to make each day.
Time-savers are my friends.
To create these lovely kabobs, I used a FUNBITES Cube It shape cutter. It works on sandwiches, cheese, pancakes, watermelon, omlettes. The possibilities are endless. It's a mom-designed, BPA-free, US-made product. Pssst, you can put it in the dishwasher.
